Hidden Valley Ranch Chicken Breasts


Another super easy recipe to make for the whole family!  They'll never know it was low carb!  Enjoy!

Ingredients:4 Boneless Chicken Breasts
1/2 package powder Ranch Dressing
4 slices of bacon
1 cup mixed shredded cheese
How To Prepare:Arrange chicken breasts at bottom of casserole dish. Sprinkle dressing on top. Lay bacon across to cover all and top with cheese. Bake covered at 350 degrees for 45 minutes. Remove foil and bake open for an additional 15 minutes.

Best Low Carb BBQ Sauce!


 

Tonight our family enjoyed a BBQ pork roast with the best Sugar Free BBQ sauce I have found!  I put a pork roast in the oven for 1 hour 45 min @ 350 degrees, and applied 4Tbsp of this delicious sauce before popping back in the over for another 15 minutes.  The results...AMAZING! I highly recommend this product even though it is a little more expensive than store brand.

Mini Caramel Cheesecakes

 


One of the best dessert recipes I have found, and it is so easy!  Perfectly portioned, so you don't overindulge.  I originally found this recipe on lowcarbfriends.com labeled as cream cheese muffins, but also modified it to my liking. Enjoy!

Ingredients:2 -8oz pkgs Cream Cheese
1/2 C. Sugar Free Caramel DaVinci's Syrup
2 Eggs
How To Prepare:Soften cream cheese in microwave for about 40 seconds. Add syrup & eggs. Beat with mixer till smooth. Pour into 12 muffin pans lined with the papers. Bake at 350 for 20 min. Cool for at least 6 hours in fridge.  Optional: top with a spoonful of whip cream.


  

Twice Baked Cauliflower Casserole

 


This recipe is a favorite in our household, especially when I am craving mashed potatoes.  I found this recipe originally on lowcarbfriends.com, but modified it to my liking.  Enjoy!

Ingredients:1 head cauliflower
1/2 C. shredded mozzarella cheese
1/2 C. shredded cheddar cheese
1/4 C. bacon pieces
1/2 stick butter
1/4 C. sour cream
2 T heavy cream
Salt / Pepper to taste
                    
How To Prepare:Cut cauliflower head into quarters, removing any green leaves.  Put in microwave safe dish casserole dish, add 1/4 C water, cover with plastic wrap and microwave for7 minutes.  Drain water, and mash with potato masher / mixer. Add cheeses, bacon, butter, sour cream & heavy cream. Mix well.  Bake in oven for 20 minutes at 350 degrees.
