Twice Baked Cauliflower Casserole

 


This recipe is a favorite in our household, especially when I am craving mashed potatoes.  I found this recipe originally on lowcarbfriends.com, but modified it to my liking.  Enjoy!

Ingredients:1 head cauliflower
1/2 C. shredded mozzarella cheese
1/2 C. shredded cheddar cheese
1/4 C. bacon pieces
1/2 stick butter
1/4 C. sour cream
2 T heavy cream
Salt / Pepper to taste
                    
How To Prepare:Cut cauliflower head into quarters, removing any green leaves.  Put in microwave safe dish casserole dish, add 1/4 C water, cover with plastic wrap and microwave for7 minutes.  Drain water, and mash with potato masher / mixer. Add cheeses, bacon, butter, sour cream & heavy cream. Mix well.  Bake in oven for 20 minutes at 350 degrees.
